I agree with you that student centred design is very important in order to make sure that your learners can understand more efficiently. I think from the start, laying the course outcomes, responsibilities and activities that will be used in the course can help the learners to create a logical path to follow and they know in advance about the learning process. Another point to add would be to make sure that learners have the access to tools that are required and easy to use just like you mentioned about the needs of learners.
Also, I really liked the concept of door handles used to explain learner design.
